Nutty Harvest Cottage Cheese Salad

With their multiple health benefits, consuming a serving of leafy greens each day can be one of the best habits to get into. Myself not being so diet conscious but nowadays I am in love with nutty harvest salad that is so tasteful and satisfying my appetite. Aside from its natural good taste and great crunchy texture alongside wonderful colours and fragrances, eating one serving of this fresh, raw vegetables each day can have significant health benefits. Eating this fibre-rich salad will help you to feel full faster, the more raw vegetables you can incorporate into your salad, and the greater the potential positive effects will be. If you dress your salad with a little olive oil, there may even be some additional years in it for you.

INGREDIENTS:

Cottage cheese sliced 150 gram

Fresh cut lettuce ½ cup

Red cabbage ¼ cup

Red and yellow bell peppers sliced ¼ cup

Green onions cut with greens ¼ cup

Fresh cut Spinach: ¼ cup

Cut dry fruits: walnut, almonds, cashew nuts and raisins ¼ cup

Flaxseed 1 teaspoon

Extra virgin Olive oil 1 tablespoon

METHOD:

  1. Thoroughly wash and then prepare the veggies.
  2. Gently combine the cottage cheese, salt (preferably pink salt) & black pepper. Sauté on low flame on a heavy base pan till the paneer turns golden brown.
  3. Fold in all the veggies with olive oil and toss well along with the dry fruits and flax seeds.
  4. Add the cottage cheese and serve the salad immediately. You can also add any salad dressing (mustard, peri peri, mayonnaise) but I enjoy without any dressing. The crunchiness of nuts with fresh greens and sweetness of raisins are much more flavorful.
