Beetroot Poori (Also called Red Poori)

Who doesn’t like colour on their plate? This is a great way to make your child eat beetroot with minimum fuss.

INGREDIENTS: 

250gms beetroot

Flour

Salt

Method To Make Recipes for Kids:

Peel the beetroot and pressure it. Let it cool and blend it in the mixer till it’s a fine puree. Take the flour and instead of water add the beetroot puree and salt and knead it. Beetroot makes the dough sticky so you can add a teaspoon of oil to the dough. You can also add water till it becomes soft. Take a deep frying pan and add oil. Roll out the pooris in circular shapes. I often use large sized cookie cutters to give the pooris exciting shapes! These can be served with chickpeas (chanas) or potato curry.

These pooris can be made with peas and spinach in the same way, turning it into a green poori.

Egg Muffin

Eggs are a wonderful source of protein and can be made in a number of ways. This egg muffin takes five minutes to make.

INGREDIENTS:

Two eggs

Onions finely chopped

Coriander finely chopped

Tomatoes finely chopped

Salt

Method To Make Recipes for Kids:

Beat the eggs and add the onions, coriander and tomatoes. You can add whatever filling you want like cheese, mushrooms etc. according to your tastes. Take a small sized microwave safe bowl and pour the egg batter in it. Put it in the microwave for 2 minutes. Please note that the cooking time could vary according to the brand of the microwave. You can check if the egg has cooked by gently putting a fork in and pulling it out. If it’s dry then the egg has cooked. Turn the bowl upside down and shake the egg free. You have a muffin-shaped egg to serve!!

Cut the carrots, peas, spinach and bottle gourd and pressure them for 5 minutes. Let them cool and puree them in the blender. Take the flour and add the puree, onions and salt and mix well. You can add a bit of water to knead the flour into a firm dough. Take a flat pan and heat it. Roll out the dough in round or square shaped paranthas and cook with ghee on the pan. Serve hot with curd and butter.
