Super Delicious Spinach rice with veggies- a new way to delight your taste buds

Spinach(palak) is a very nutritious green veggie. This is the perfect way to add some green nutritional value to your diet. The best palak recipe for the fussy kids or for those who dread at the mere mention of the word Palak. Try it once, I am sure you will like it.

PALAK RICE WITH VEGGIES
Ingredients
1 cup basmati rice cooked /Brown /Red rice
1 tsp ghee
¼ onion thinly sliced
2 green chilli slit lengthwise
1 cup palak leaves/spinach finely chopped
1 finely chopped Onion
1 pepper finely chopped
1 tomato finely chopped
1/2 cup beans
1/2 cup peas
1/ 2 cup cauliflower / Broccoli
1 medium potato finely chopped
Few peanuts
Salt to taste

INSTRUCTIONS
In a pan, add chopped onions and green chillies. Fry till they turn translucent.
Add all veggies and peanuts and add finely chopped palak leaves and fry for a minute till they shrink and change its colour.
Once the palak leaves are cooked, add peas and fry till the peas are cooked.
Add cooked rice and salt to taste and all the required spices.
Mix well without breaking rice grains. cook for 5 minutes.
Serve hot, with fresh curd or cucumber raita.

NOTE:
Another way of making it is “make puree and pressure cook all together.”

Serve with takda dahi
Serve with carrot raita,
Serve with cucumber, tomato raita
Serve with a dash of ghee and takda garlic
Serve with buttermilk ( salted / masala ).
